ALABAMA BISCUIT MIX + NATALIE’S APPLE CRISP

The Alabama Biscuit Company is changing the way people perceive (and eat) biscuits. Jonathan Burch of Birmingham, Alabama, has developed a delicious and healthy recipe for biscuits using organic sprouted spelt flour, aluminum-free baking powder, and organic Celtic sea salt.

The biscuit mix is now a favorite of the Alabama Chanin team. We made biscuits with it at the Heath event this past August and are now using and selling it in our café.

Spelt flour is a mild whole-grain flour and can be substituted directly for whole-wheat or all-purpose flour in most recipes. It has a slightly sweet, nutty flavor, which makes it the perfect ingredient for baked goods. The café kitchen recently adapted Natalie’s Warm Apple Crisp recipe, incorporating the biscuit mix.

APPLE-CRISP-4W

NATALIE’S APPLE CRISP

Yields 2-4 Servings

4 medium apples, peeled, cored, and sliced
1/2 stick unsalted butter
2/3 cup Alabama Biscuit Mix
1/3 cup rolled oats
1/2 cup dark brown sugar
1 teaspoon cinnamon
1/2 teaspoon Kosher salt

Preheat the oven to 325 degrees.

Peel and slice the apples and divide among two separate 6 inch cast iron round skillets.

Melt the butter over medium heat in a small saucepan.

Combine the biscuit mix, oats, dark brown sugar, cinnamon, and salt. Pour this into the saucepan with melted butter and stir until evenly combined and crumbly. Remove from heat and spread this mixture, dividing evenly over the apples in the skillets.

Place in the oven and bake, loosely covering with aluminum foil for the first 20 minutes. Rotate and uncover, and bake for another 30 minutes, pressing down on the crust halfway through baking to smash the apples.

Remove from oven when the crisp is evenly browned and the apples release liquid that bubbles over the edges. Let cool for about 10 minutes on rack before serving.
